Marine crustaceans (Phylum: Arthropoda; Subphylum: Crustacea) are very much important in the pelagic, and benthic trophic networks as they serve as food for several constituents of marine life. As the marine crustaceans such as shrimps, prawns, crabs, lobsters, hermit crabs, krill, stomatopods and barnacles are rich in protein and many of these groups help to meet the food requirements for mankind’s ever increasing population, their cultivation is also gaining greater significance to the global aquaculture industry. Further, the byproducts of crustaceans wasted by the marine fish processing industries are also found to be of great use in the production of valuable pharmaceuticals and nutraceuticals. Oral administration of marine crustacean microparticle dietary supplement has been reported to prevent and treat Inflammatory bowel disease.

Though several books are presently available on the Biology and Aquaculture of marine crustaceans,  a new title relating to the nutritional quality and human health benefits of marine crustaceans is the need of the hour. The present title would be the first of its kind to answer this long felt need. As the importance of nutritional marine life is receiving much attention in the recent decades, it is strongly hoped that the present title will provide a complete information on the nutritional values of the different constituents of marine crustaceans of the world’s seas and oceans. Further, It  would be of great use as a text-cum-reference for students, teachers and researchers of various disciplines including Marine Biology and Fisheries Science; a valuable source of reference for college and university libraries; and as a guide for the industries involved in the development of new human food  and live feeds.

Dr. Ramasamy Santhanam, Ph.D. is the former Dean of the Fisheries College and Research Institute, Tamil Nadu Veterinary and Animal Sciences University (presently under Tamil Nadu Dr. J. Jayalalithaa Fisheries University), Thoothukudi, TN, India. On invitation, he participated and presented research papers in 13 International Fisheries Science Conferences held at Canada, Japan, Panama, Denmark, Germany, Spain, The Netherlands, Switzerland, South Korea, and Australia. He has also served as a Resource Person for the Training Workshop organized by the Marine Science and Fisheries Centre, Ministry of Agriculture and Fisheries Wealth, Muscat, Oman. He was an active Member of the American Fisheries Society, United States; World Aquaculture Society, United States; Global Fisheries Ecosystem Management Network (GFEMN), United States; and the IUCN’s Commission on Ecosystem Management, Switzerland. To his credit, Dr. Santhanam has 50 books published on various aspects of Marine Biology/Fisheries Science; and three of his books have been listed as “Best Marine Biology Books of All Time” by the World Book Authority.

Dr. Subbiah Balasundari, Ph.D. is serving presently as Dean, Dr. MGR Fisheries College and Research Institute, Tamil Nadu Dr.J.Jayalalithaa Fisheries University, Ponneri, TN, India. She possesses 33 years of professional experience spanning the seafood industry, the Agricultural Research Service, and the State Agricultural University system. Her contributions in the field of her specialization viz. Fish Processing Technology include the development of about 20 contemporary value-added products from finfish, shellfish, and seaweeds, of which six products have been successfully commercialized. To her credit, Dr. Balasundari has authored 9 books, 21 manuals, and 30 research articles. She has guided 15 research scholars in the discipline of Fish Processing Technology. Dr. Balasundari was the recipient of 11 awards conferred by Universities and Scientific Societies in recognition of her academic and research contributions.

Dr. Raju Mohanraju, Ph.D. is presently serving as Professor & Head in the Dept. of Ocean Studies & Marine Biology, Pondicherry Central University, Port Blair, India. He has about 30 yrs of teaching experience and 8 years of research experience in the field of Marine/Fisheries Microbiology. He served as guide for 14 Ph.D. Research Scholars and about 100 M.Sc. dissertations. He was awarded “Dr. Bernie-Davies award” at Woods Hole Oceanography Institute, USA in 1991; and “Beast Teacher Award” continuously for 5 years during 2008-2013. To his credit, Dr. Mohanraju has 83 research published in nationally and internationally reputed peer reviewed journals; and one book published by Apple Academic Press, USA. He has also served as Executive Member of Pondicherry University and Advisory Committee Member of Zoological Survey of India Port Blair. He was also a Member , State Level Expert Appraisal Committee, Institutional Bio Safety Committee (DBT) Regional Medical Research Centre ICMR and State level Pollution Control Board and Wildlife Committee of Andaman Islands. He is also serving as an a member of American Society of Microbiology, Marine Biological Association of India, Oceanography Society of India, Indian Association of Microbiologists, Ocean Biographic Information System and Ocean Society of India.
